Green Chile Enchiladas

Guest post from Brigette Shevy Green Chile Enchiladas is a recipe our family discovered many years ago in the cookbook, Once-A-Month Cooking, and it immediately became a family favorite! These creamy, cheesy enchiladas are easy to put together and freeze beautifully. Pair them with Spanish rice, a tossed salad, and some chips and salsa for… Read More

Spaghetti Pie

Guest post from Brigette Shevy This has been one of my Mom’s go-to recipes for as long as I can remember (so long that none of us can remember where the original recipe came from). It still is! Any time we visit my parents for more than a few days, Spaghetti Pie will most likely… Read More

Poor Man’s Steak

Guest post from Brigette Shevy This stick-to-your-ribs recipe is sure to be a favorite for all those meat-and-potatoes guys out there! Growing up, it was always a meal that the men in our house looked forward to. Now, my little boys gobble up man-size portions of this and still ask for more! Although it requires… Read More

Cheesy Hamburger Potato Soup

I like soups that are rich, creamy, and full of veggies and carbohydrates (who needs meat?). My husband, on the other hand, only eats soups that are hearty, meaty, and not rich (veggies optional). This recipe is our happy compromise. The fact that it is inexpensive to make, feeds a crowd, and is full of ingredients you probably already have on hand means everyone wins!

Freezer-Friendly Barbecued Meatballs

My great grandmother passed along a love of barbecue meatballs to our family — and it’s a recipe we’ve made over and over again. We love to serve these with twice baked potatoes, homemade rolls, and tossed salad. And even if you’re not a fan of most freezer meals, I bet this one would work for your family since you freeze it uncooked. No one will likely know that you pulled this out of the freezer to serve for dinner. 🙂

Build-Your-Own Haystacks Recipe

This recipe is so flexible and forgiving; we adapt it based upon what we have on hand and what we get on sale. It’s been a favorite of ours for many years!
